Do they get scrubbed, or turned over?
Neither, on a current grill. The instruction is a heat clean: every grill burner on high including the sear, rotisserie burner left off, hood closed, ten to twelve minutes. Then off, cool completely, lift the trays out, wipe them. Nothing there asks you to turn a briquette by hand. Why would a briquette tray come out at all?
To make room for the smoker box. One grate section lifts away, the rest slide aside, and the half-size centre tray—the one with no flash tube beneath it—comes out so the sealed box can sit above that burner instead. My older Wolf grill has no briquettes in it
